Roll in one direction and move the dough as needed. Do not go back and forth.

My teacher said it over works the dough and can make it tough. You roll all in the same direction. Have you ever cooked left over dough ( when finished)? It is chewy.

Was this in a context with wheat flour? Because in that case I can see how gluten can harden up. But this doesn’t happen in gluten-free flours.

My tortillas seemed to be a bit stiff, although the flavor was still good. Did I not roll it out thin enough? Its' never as easy to do as it looks! Thank you!

That’s normally because they are overcooked: try to lower the heat of the pan and/or cook for a little less time. Also, you could add 1 more tbsp of oil to the dough.

Mine were a little stiff as well. The dough was a little bit sticky when I started rolling and I found it very difficult to get them very thin without breaking. Do you maybe have any tips?

The first suggestion is to try cooking it on lower heat. Also you can add a bit of oil in the dough.
