Easter is often a season of heavy tradition. There is the lamb, the massive chocolate eggs, and the elaborate fresh pasta dishes that take half a day to assemble. But this year, I am craving something much lighter. I want a table that looks like a spring explosion and a menu that doesn’t require me to stand over a stove for too long.
These are the brunch or lunch dishes I would love someone to cook for me. The vibe is aggressively green, effortlessly gluten-free, and designed for the kind of low-stakes hosting where the most stressful part is choosing which wine to open. These are some brunch or lunch dishes I would love someone to cook for me.



Rice Paper Quiche: A quick, gluten-free crust made from rice paper, filled with every leafy green in sight and plenty of feta cheese. It’s finished with an egg on top because it’s still brunch, after all.
Spring Risotto: Bright with fresh peas and enough Parmesan to make it feel like a celebration.
Crêpe Rolls: Filled with a mixture of spinach and ricotta, or whatever wild greens you can forage in your backyard.



On the sweet side, I honestly couldn’t choose. If I were the guest, I’d hope for a flourless almond cake, a strawberry galette, or some quick waffles to go with the first fresh berries appearing at the farmers market. I would probably just bake all of them.
And for your breakfasts during the week, these Carrot Madeleines are an essential. They bring a touch of vibrant orange that immediately brightens the table.
