The easiest Fudge Cake for Valentine’s Day - Loaded with chocolate

When it comes to chocolate cakes, people take sides. I’m Team Fudge all the way. Sure, I respect a good spongy chocolate cake—it’s great for breakfast. But give me decadent, truffle-like, chewy chocolate intensity, and I will be happy.
This cake is a proud representative of that category, and it makes the perfect dessert for your Valentine’s Day dinner. It’s stupidly easy—five minutes, basic ingredients, one bowl, no weird steps. Just rice flour, corn starch, chocolate, oil, plant-based milk, sugar, and baking powder (and yes, you read that right—this cake is both gluten-free and vegan, but no one will notice).
At this point, you might be wondering: how do you get a fudgy, rich chocolate cake without butter or eggs?
Simple. Use tons of good-quality chocolate. Don’t cheap out. The better the chocolate, the better the cake. You’ll taste the difference.
Ingredients
1 cup dark chocolate chips (200 g)
4 tbsp sunflower seeds oil OR light flavoured olive oil (/ 60 ml)
7 tbsp water (100 ml)
7 tbsp plant-based milk (100 ml)
6 tbsp sugar (80 g)
¼ cup rice flour (50 g)
7 tbsp corn starch (50 g)
a pinch of salt
½ tsp baking soda
1 tsp baking powder
unsweetened cocoa powder / powdered sugar (optional)
How to
Preheat the oven to 355°F (180°C).
In a large bowl, melt 1 cup of dark chocolate chips (use a microwave or a double boiler). Once melted, add 4 tablespoons of seed or olive oil, 7 tablespoons of water, and 7 tablespoons of plant-based milk. Whisk well until smooth and fully combined.
Fold in ¼ cup of rice flour, 7 tablespoons of corn starch, and 6 tablespoons of sugar. Then, add a good pinch of salt, ½ teaspoon of baking soda, and 1 teaspoon of baking powder. Mix until just combined—don’t overmix.
Line a 7-inch cake pan with parchment paper and pour the batter in.
Bake for 35 minutes. The center should remain slightly wet and gooey, so don’t overbake.
Let the cake cool completely, then sprinkle with powdered sugar or cocoa powder (optional).
