They will, but when in doubt, pick it up with the spatula, turn it into your hand so that the second side is facing up, then use the spatula corner tip to open (pierce) the second side and you'll see if it's done. If not put that second side back down on the heat. Never turn a pancake twice on the heat (grill, pan, etc.).

I'm glad. I couldn't eat pancakes for years after that job.
Basically, the pressing down pushes out all the air. They are then cakey, but not fluffy.
It's the same with meats, only you're pressing out the juiciness (especially with burgers).
